Dark Chocolate Peppermint Bark

It’s that time of year! Time for some AMAZING foods… with no guilt, right?! Check out this delicious Dark Chocolate Peppermint Bark!

Layer 1

  • 12 oz of dark chocolate chips or 2 high quality bars, broken into pieces

  • 1/2 tsp of Peppermint Extract

  • 1/4 tsp Pink Himalayan or Sea Salt

  • OPTIONAL - add nuts of your choice

Layer 2

  • 3/4 cup coconut butter

  • 4-6 drops vanilla stevia or 1/2 packet to taste

  • 1 organic Candy Cane, crushed

Directions

Create a double boiler to melt the chocolate: bring a pot of water to a boil, reduce to very low and rest a larger bowl on top. Add the chocolate, peppermint extract and salt to the bowl, allowing it all to melt. Mix until smooth, and remove from heat promptly. Line an 8 x 8 baking dish with a large piece of parchment paper or foil and pour the chocolate mixture inside. Use a spatula to spread out. Place your baking dish in the freezer for at least 15 minutes as you prepare the second layer.

For the second layer, make sure your coconut butter is soft. If it’s freshly made it will be soft and perfect. If its store bought, you’ll need to microwave it for about 1 minute to soften. (Also, be sure to stir it as well. Just like with natural nut butters, the oil can separate).

Mix the soft coconut butter with stevia and then pour over chilled and hardened first layer. Sprinkle with crushed candy canes and place back in the freezer for another 5-10 minutes to set. Once solid, use the sides of the parchment or foil to lift out the block. Break into rustic pieces or use a knife to cut desired sized squares. Enjoy right away or store in fridge.
