Air Fryer Cashew Crusted Chicken

I’ve had my Air Fryer for about 3 weeks and I’m IN LOVE! If you don’t have one, it is a must for easy, healthy dinners!

This Cashew Chicken recipe is by far both mine and my family’s favorite!

Air Fryer Cashew Crusted Chicken

Ingredients

  • 2 lbs thin skinned chicken tenders

  • 1/2 tsp paprika

  • 1 tsp chili powder

  • 1/4 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 tsp cumin

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • 16 oz cashews

  • 1-2 cup almond or coconut milk

Instructions

Preheat air fryer to 365 degrees. In a food processor, chop the cashews with paprika, chili powder, onion powder, garlic powder, black pepper, cumin and sea salt. Spread this mixture out on a plate. Pour the almond milk into a bowl and dunk the chicken into the almond milk. Directly transfer the chicken into the cashew mixture and coat both sides. Place the chicken in the air fryer flat and not overlapping each other. Be sure to spray the air fryer with olive oil prior placing the chicken in. Cook for 9 minutes on one side and then flip and finish cooking for an additional 9-10 minutes.
